Sunny Garlic Spread

  • 1 cup sunflower seeds
  • 2 cloves garlic
  • 1 lemon, juiced
  • Salt & Pepper to taste
Blend or process all ingredients, adding water until a thick cream is produced.  Serve with crudités – freshly cut vegetables like carrots, celery, cucumber, broccoli, etc.

Guacamole

After making this guac, I made it into a salad!  Dolloped onto a bed of lettuce, covered in fresh sweet corn off the cob, framed by sliced cherry tomatoes.  It was delicious and a full meal!

Ingredients:
  • 2 avocados
  • 1/2 jalapeno
  • 2 cloves garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 2 tablespoon onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 ear corn, sliced off cob
  • 1 tomato, diced
In a food processor with the "s" blade, mix avocado, jalapeno, garlic and spices.  Stir in diced veggies and sprinkle lemon juice on top to keep it green and fresh.

Peach Sauce

Just like applesauce, only using peaches.  In fact, want some fresh applesauce?  Substitute apples instead of peaches, and voila!  Did you know that all the applesauce you buy in a store is cooked?  You lose so much nutrition simply so it can stay on a shelf longer. Well, no more!  You can make your own in under five minutes!

Ingredients:
  • 3 Peaches, pits removed
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 5 dates, pits removed
Blend all ingredients until smooth.  Serve cold.

Orange Sunshine Dip

  • ½ cup sunflower seeds
  • ½ orange
  • 2 Tbsp lemon juice
  • ½ t salt
  • ½ Cup water
  • 1 clove of garlic
Blend until creamy.

EASY applesauce:

  • 2 apples
  • 1/2 tsp lemon juice
  • 1 tsp cinnamon
  • 1/2 cup raisins
Blend until smooth (add NO water!)
