Peach Salsa

Prep Time: 5 minutes

Ingredients
• 3 peaches, chopped 
• 1/2 bunch Cilantro, chopped
• 3 green onions, chopped
• 1-2 garlic cloves
• 1/4 of a Jalepeno (seeds removed if you're a sissy)
• 1 tsp salt

I don't chop the ingredients much, as I let the food processor do it's job. I place all the ingredients in and pulse until everything is well mixed and well chopped. Lasts at least a week in the fridge if you don't eat it before then. Enjoy!

Spicy Ranch Dressing

Prep Time:  5 minutes
Ingredients
  • 1 ½ cup Raw Cashews
  • 1 cup water
  • 2 Lemons, juiced
  • 1 tsp. Pink Himalayan Salt
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Italian Seasoning
  • 1 tsp. Cayenne Pepper
Blend all ingredients till smooth, but add the water slowly (it’s easier to pour it in slowly until it’s the consistency you like than try to take out if you add too much).  Makes 1 cup of sauce and lasts a week in the refrigerator.  Use as a dip, a condiment, or a sauce!

Sunny Garlic Spread

Prep Time:  5 minutes
Ingredients
  • 1 cup sunflower seeds
  • 2 cloves garlic
  • 1 lemon, juiced
  • Salt & Pepper to taste
Blend or process all ingredients, adding water until a thick cream is produced.  Serve with crudités – freshly cut vegetables like carrots, celery, cucumber, broccoli, etc.

Guacamole

After making this guac, I made it into a salad!  Dolloped onto a bed of lettuce, covered in fresh sweet corn off the cob, framed by sliced cherry tomatoes.  It was delicious and a full meal!

Ingredients:
  • 2 avocados
  • 1/2 jalapeno
  • 2 cloves garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 2 tablespoon onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 ear corn, sliced off cob
  • 1 tomato, diced
In a food processor with the "s" blade, mix avocado, jalapeno, garlic and spices.  Stir in diced veggies and sprinkle lemon juice on top to keep it green and fresh.

Orange Sunshine Dip

  • ½ cup sunflower seeds
  • ½ orange
  • 2 Tbsp lemon juice
  • ½ t salt
  • ½ Cup water
  • 1 clove of garlic
Blend until creamy.

EASY applesauce:

  • 2 apples
  • 1/2 tsp lemon juice
  • 1 tsp cinnamon
  • 1/2 cup raisins
Blend until smooth (add NO water!)
